I've noticed them a lot and wondered why there are lots of green domes on some buildings all over London?

Copper: Copper corrodes to greenish patina. It is very malleable, so can be shaped easily. It does not rot like wood or chip and break like tile or slate. It is also non-porous, so when welded at the seams or flashed properly will not leak.



Slate: Since it is made of many thin layers, when struck properly it forms sheets which are ideal for roofing. most roof slate is gray, but green was also widely used.



Shakes or wood shingles: Wood shingles under the right conditions will form a layer of algae or moss(which is green predominantly)

Like someone else said, copper turns green, so the roof is probably copper. At meadowhall (in Sheffield) there are green domes there.
